INGREDIENTS

  • 3 eggs
  • 3/4 cup butter
  • 1/2 teaspoon salt
  • 1 1/4 cup milk
  • 1 cup caster sugar (or blend your sugar till it’s almost fine like powder)
  • 21/2 teaspoons baking powder
  • 21/2 cups all purpose flour
  • 1 teaspoon vanilla flavour
  • 1 cup desicated coconut

DIRECTIONS

1. Allow butter and eggs to be at room temperature for at least 30 minutes.
2. Preheat your oven to 350 degrees F and prepare your cupcake papers.
3. In a bowl, add butter and whisk together with a whisk or electronic mixer for 1 minute (till light and fluffy).
4.Gradually add sugar to the butter and keep beating for another minute.
5. Add eggs, one at a time and beat till well combined.
6. Add vanilla essence.
Sieve flour, then add it gradually, while also adding the milk.  Add 1/2 cup of desiccated coconut.
7. Once the batter has been properly mixed, use a small scoop and transfer the batter to the cupcake papers, in the cupcake pan.
8. Sprinkle the left over desiccated coconut over the cupcakes
9. Bake for 10 to 15 minutes.
You can test if its ready by inserting a toothpick, if it comes out sticky, keep baking, if it comes out clean then it is ready.

Take out the cupcakes and allow to cool for 10 minutes.
