Red velvet cake is one of the widely eaten cakes in Nigeria. People love it most especially because it has a very unique taste and it is nice variation from chocolate cake.

Ingredients

  • 1/2 cup Unsalted butter or Shortening
  • 1 1/2 cup White Sugar
  • 2 Eggs
  • 2 tbsp Cocoa Powder
  • 1/2 tsp Salt
  • 1 cup Buttermilk or make it (add 1tbsp white vinegar to 1 cup of Fresh milk and stand for 30mins)
  • 1 tsp Vanilla Extract
  • 2 1/2 cup Flour
  • 1 tsp Baking Soda
  • 1 tsp White Vinegar

For the Frosting

  • 2 cups Unsalted Butter
  • 2 cups of Cream Cheese
  • 1 tbsp Vanilla Extract
  • 3 cups Icing Sugar

Directions to make the cake

  • Cream the Shortening and the Sugar till it is well blended
  • Break the Eggs and add to the mixture
  • Make a paste out of Cocoa Powder and Red Food Colour
  • Add the paste to the batter and mix properly
  • Add the Salt to the Flour
  • Add the Flour to the batter alternating with the Buttermilk
  • Mix Baking Soda and the Vinegar and Stir properly
  • Add the Soda and Vinegar mixture to the batter and Mix

Make the Frosting

  • Use an electric mixer to cream the butter until it is light and fluffy
  • Add the cream cheese and mix until the butter and cream cheese are well combined
  • Add Icing sugar and mix some more
  • Add the vanilla flavour and mix well
  • Spread on the Cake
