Sweet potato muffins are a quick and easy snack made in a blender or one bowl, it’s moist and slightly fluffy on the inside and tender on the outside.

What’s not to love about muffins? And a healthy potato muffin at that! These little slices of heaven can be enjoyed at any time of the day.

Ingredients

  • 1 medium-sized sweet potato, diced
  • 2 medium-size banana
  • 1 serving spoon of vegetable oil
  • 2 large eggs
  • 6 tablespoons of honey
  • 1 tablespoon of cinnamon
  • ¾ tsp of ginger
  • ¼ tsp of nutmeg
  • 2 tsp of baking powder

Directions

1. Preheat your oven to 350F/180C.

2. Lightly grease your muffin tin.

3. Bake your sweet potatoes for an hour, set aside to cool and mash.


4. Add ¾ cup of mashed sweet potatoes, banana, vegetable oil, eggs, honey, cinnamon, ginger and nutmeg in a blender and blend till smooth.

5. Add your baking powder to the blended mix and blend some more.

6. Pour your batter into the greased muffin tin or small baking pan, filling only ¾ of the muffin tin/pan.

7. Bake in an oven for 20 minutes or until the top of your muffins are golden brown.

8. Serve cool and enjoy with an ice-cold tea.
