
The groundnut soup is a Nigerian delicacy popular with the people of the Etsako tribe in Edo State. A perfect blend of sweet and savoury, the groundnut is always a winner, and it’s difficult to find anyone who has tasted it and disliked it.
The soup is very easy to make and a treat you should give yourself every once in a while.
The process of preparation should take you about 60-90 minutes. When you are done, you can serve with any swallow of your choice.
Ingredients
- 1 cup raw un-skinned groundnuts
- 1 handful of ugu leaves
- 1 medium-sized smoked fish
- 1 medium-sized stockfish, an assortment of boiled meats
- Beef stock
- 3 – 4 Ata Rodo or more
- 1 red onion
- 1 cooking spoonful of Palm oil
- 1 cup periwinkle
- Salt
- Seasoning cube
