Prepare Ekuru (White Moi Moi) With This Simple Recipe


Ekuru also known as Ofuloju or White Moi Moi is a dish native to the Yorubas especially those from Kwara and Ondo.

It is made with peeled beans like the regular moi moi but instead of adding all your ingredients into the beans paste, a special sauce is made to eat it with.

It is usually eaten with Ata DinDin (Fried Sauce) or Eko Agidi.

Ekuru is very simple to make and very nutritious. It is one way to load up on the proteins and enjoy every bit of it.

Ingredients

– 360g black-eyed or brown beans

– 1 small onion

– 1 big stock cube

– Salt (to taste)

– 600mls lukewarm water


– 2 cooking spoons vegetable oil (optional)

Preparation

  1. Soak peeled beans in water for at least 3 hours. This is to aid the blending at the time of use.

2. Blend the beans with little water, to form a smooth batter. The consistency should be like that of moi moi. Not too thick and not too light, it should be in-between.

3. Pour the blend into a bowl, add vegetable oil to allow the ekuru batter easily come out and stir.

4. Add salt to taste and some water if necessary. Stir well for 10 to 15 minutes till you get a good mixture of all the ingredients using a hand mixer or wooden spoon.

5.Put some water in a big enough pot and bring to a boil. Then add a base (of leaves or foil) for the wraps of ekuru.

6. Scoop the ekuru mix until finished into the container of your choice using aluminum foil or banana leaves and place in the pot of boiling water.

7. Cover the wraps with some leaves or a plastic bag to keep the heat inside the pot. Then, cover with the pot lid and steam/cook on medium heat.Cook for at least an hour.

8. After an hour, check the ekuru by putting a knife through one of them and if the knife comes out smoothly, then your food is done. If not, allow for some more time.

9. Serve with stew or sauce of your choice.
