Recipe: How To Make The Perfect Gari Fortor (Gari Jollof)

Gari Fortor also known as Gari Foto or Gari Jollof is a delicacy that originates from Ghana.

It can be served as a main dish mixed with vegetables or as an accompaniment for rice, beans, or Jollof.

It is very simple and easy to make.
This particular recipe is made with corned beef but you can use meat, fish, eggs, and sardines.

Ingredients

  • 2 cups gari
  • 1 medium corned beef
  • 2 chicken sausages, sliced
  • 1 medium onion, sliced.
  • 3 cloves of garlic, minced.
  • 1 tsp fennel seeds
  • 4 medium tomatoes, purèed
  • 4 tbsp tomato paste
  • 1 tsp curry powder
  • 1 tsp rosemary powder
  • 1 medium carrot. (Diced).
  • 1 cup kidney beans
  • 1 medium green bell
  • Pepper
  • Salt
  • Vegetable oil

Preparation

  • Heat vegetable oil over medium heat, add sliced onion, garlic, fennel seeds, stir and add tomato paste, stir, and let simmer for 3minutes.
  • Add tomato purèe, stir, and let simmer for 5 minutes.
  • Add curry powder, rosemary powder, salt, stir, and let simmer for 2 minutes.
  •  Add chicken sausage, and corned beef, stir, and let simmer for a minute.
  • Add diced carrots, stir and let simmer for a minute then take off the heat and set aside to cool
  •  Make salt solution(mixing salt in water), sprinkle on gari, and stir to mix evenly.
  • Add the stew, stir, and mix evenly then add green bell pepper, kidney beans and mix in.
  • Gari foto is ready to serve. Garnish with parsley.
