Recipe: How To Prepare The Hausa Delicacy, Miyan Kuka


Every culture in Nigeria has its own unique features and food is one of them. Today, we’ll be looking at a traditional meal from the Northern part of Nigeria called, ‘Miyan Kuka’ you can try out this weekend. Miyan means Soup in Hausa while Kuka means baobab leaves in English.

Miyan Kuka is also called Luru soup; it’s one of the simplest northern soups made with dried fish. It pairs well with ‘Tuwo’ (cereal meal) of any kind and benefits from a dollop of ‘Mai Shanu ‘(Processed Milk Fat).

Here’s how to cook this delicious, traditional meal.

Ingredients

1.3 tablespoons of Kuka powder (Baobab Leaf)

2. 1kg cow ribs (cut into pieces)

3. 2 Dried Catfish (Busheshen Kifi)

4. 2 cooking spoons red palm oil

5. 2 tablespoons ground crayfish

6. 1/4 Cup Fresh Locust Beans or 2 Caked Disks (Dawadawa)

7. Habanero pepper (atarodo, atarugu)

8. 1 onion bulb


9. 2 big seasoning cubes

10. Salt (to your taste)

Directions

1.Cook the cow ribs with the seasoning cubes and onion.

2.When the meat is done, turn off the heat, remove the chunks of onion then take out the meat from the beef stock.

3. Add the Kuka powder, spreading over the meat stock as you add. Then stir very well with a slotted spoon to ensure that you get a smooth mix without lumps.

4. Add the pepper, crayfish and Dawa Dawa blend and palm oil. Stir very well.

5. Cover and cook for 5 minutes on medium heat, stirring it from time to time. Kuka is very much like ogbono hence sticks to the bottom of the pot if not stirred often.

6. After 5 minutes, add the cooked beef and some salt if necessary. Stir very well.

7. Cover to boil again

8. Serve with Tuwo
