Moi-moi is one of the most popular dishes in Nigeria, and its recipe is quite simple. It’s made from pureed beans and served primarily as breakfast.
Moi moi can be served with garri, custard, pap, or bread. Traditional moi moi is wrapped in banana leaves (popularly known as “ewe eran” or “uma” leaves). However, moi-moi can also be made in various other containers.
Here is a quick and easy recipe for moi-moi.

Ingredients

You are free to increase the quantity of ingredients or reduce them depending on the number of people you are looking to serve.

  • 1 kg of Mackerel
  • Blended Beans
  • Boiled Eggs (optional)
  • Half cup of vegetable oil/palm oil
  • Maggi
  • Salt to taste
  • 1 cup of sliced onions
  • Red Pepper
  • Ginger (Optional)
  • Crayfish
  • 3 cups

Preparation

  • Blend the properly washed beans with onions and pepper. You can include ginger to give your moi-moi a unique taste.
  • Boil the eggs and set them aside.
  • Mix the blended beans with vegetable oil (you can use palm oil).
  • Add salt and some Maggi cubes
  • Then add the mackerel and crayfish
  • Cut the eggs into rounds and set aside on a plate close to you.
  • Carefully put the paste in the properly washed moimoi leaves or foil packs and add the slices of eggs you set aside.
  • Then carefully arrange the packed moi-moi in a pot that contains some water and heat for about 20 mins.
  • Keep checking until the moi-moi is solidified.

Your yummy moi moi is ready. You can serve with custard, pap, or garri. Some people also eat moi-moi with bread.
