Macaroni is similar to spaghetti and it is pretty easy to make. Macaroni jollof gives you the chance to enjoy pasta in a different way. The good thing is it only takes a few minutes and it is quite healthy and delicious.

Ingredients

  • To prepare your own, you will need:
  • 1 Pack of Macaroni
  • 1 can of Minced Meat
  • 1 can of tin tomatoes
  • 1 Large onion
  • 2 Cooking spoons of groundnut oil
  • 2 Cloves of ginger
  • 1 Finger of garlic (chopped)
  • 3 Bay leaves
  • 3 plum tomatoes
  • 1 Tablespoon of thyme
  • Salt, pepper, and seasoning to taste
  • Water for cooking

Method of preparation

  • Blend your tomatoes, pepper, half of your onions and ginger together to make a smooth puree.
  • Place your dry frying pan on the cooker, then put your groundnut oil.
  • Allow to get hot then add your chopped garlic cloves.
  • Fry it for a while till it is translucent before pouring in your minced meat. Make sure your minced meat cooks properly (that is when it turns dark brown).
  • The next thing to add is your tomato and pepper paste, a small cup of water and the seasonings to your taste
  • Cover it and allow to cook for 25-30 mins. When it is ready, you will get a sauce with a thick consistency.
  • Meanwhile, place your macaroni in boiling water, add salt and allow to cook.
  • When the macaroni is boiled sieve the water with a strainer
  • Next, combine the macaroni with the sauce and allow to cook on low heat. Serve with a side of salad, fish, chicken or just go ahead and dig in.
