How To Prepare Melon Soup With Bitterleaf


Nigerian melon is best enjoyed when cooked with the bitter leaf or any kind of vegetables that you prefer such as ugwu, spinach, and the likes.

Below is a recipe for a delicious melon soup with bitter leaf

Ingredients:

  • 3 cups of melon (Blended Egusi seed)
  • Bitter Leaf (As desired)
  • Red Palm Oil (2 Spoons)
  • Salt
  • Pepper
  • Seasoning Cube (As desired)
  • Crayfish
  • Dry Prawns
  • Meat or Stock Fish

Cooking Direction:

Wash thoroughly the meat or stockfish then with water, chopped onions, salt and seasoning cubes for some minutes.


Wash the prawns and crayfish too, separate the head from the prawns and ground as desired.

Heat up the palm oil, add sliced onions, the grounded melon and leave to fry for like 20 minutes and stir until it thickens.

Then add the bitter leaf with little meat stock, add the prawns and leave for about 5 minutes.

Now add the boiled meat or stockfish, salt, pepper, seasoning cubes, and crayfish.

Then leave to cook for some minutes before serving
