Recipe: How To Prepare Seafood Palm-nut Soup (Abak Mbakara)

Abak Mbakara is a rich seafood palm nut soup native to the Efik and Ibibio people of Akwa Ibom and Cross River State in Nigeria.

It is very delicious and can be eaten with almost any swallow of your choice.

Below is a very easy recipe on how to prepare the Abak Mbakara.

Ingredients

  • 1 can of palm nut cream
  • 2 smoked/dry fish
  • 3 fresh tomatoes, mashed
  • 2 onions, grated
  • 3 cloves garlic, minced
  • 1 tsp black pepper
  • Fresh chilies/Chili powder
  • Salt to taste
  • Bouillon cube (Maggi)
  • 1 cup of chopped green onion (optional)
  • 1 l water
  • Fresh prawns, snails, crabs, or any other seafood of choice.

How to prepare

Step 1: Wash the smoked fish with extremely hot water, let it soak for a minute, and then cut it into medium size.

Step 2: Heat the pot, and add the smoked fish; season with black pepper.

Add garlic, tomatoes, and onions, and pour the palm nut cream into the pot. Add some water and allow it to boil for like 5 minutes.

Step 3: Add a bouillon cube, chili powder (optional), and salt to your taste.

Add the fresh chilies and seafood of choice, cover, and let it simmer for 15-20 minutes.

It is ready when the soup thickens and the red oil appears on the surface of the soup.

You can serve the palm nut soup with rice or any swallow of your choice
