Corn moi moi, also known as Ukpo Oka, Sapala, Ekoki, and Ekusu (Benin), is a traditional steamed corn pudding meal that is widely enjoyed by different ethnic groups in Nigeria.
Corn moi-moi is prepared in a similar way to the bean pudding commonly known as the moi-moi recipe by blending corn with pepper and adding other ingredients like crayfish. It is a healthy meal and very nutritious too.

Preparation
1. Peel off the husk (the green coat of the corn) and remove all the hair-like strands. Then use a sharp knife to slice down the corn to strip off the seeds from the cob.
2. Now, place the corn seeds, pepper, onions, and the crayfish into a blender and blend. Add a little water to help move the blades of the blender.
3. Transfer the blended batter into a wide bowl, add water to get a lighter but not too watery consistency, then add the palm oil, vegetables, prawns, seasoning cubes, and salt to taste. Mix thoroughly until the palm oil is well incorporated.
4. Wrap the mixture with banana or moi-moi leaves and place in a steamer or pot of boiling water for 45 minutes to 1 hour until it solidifies. (The cooking time is the same as bean pudding.)
5. Transfer to a tray, leave to cool a bit, serve, and enjoy!
