The groundnut soup is a Nigerian delicacy popular with the people of the Etsako tribe in Edo State. A perfect blend of sweet and savoury, the groundnut is always a winner and its difficult to find anyone who has tasted it and disliked it.
The soup is very easy to make and a treat you should give yourself every once in a while.
The process of preparation should take you about 60-90 minutes. When you are done you can serve with any swallow of your choice.
1 cup raw un-skinned groundnuts
1 handful of ugu leaves
1 medium sized smoked fish
1 medium sized stockfish, An assortment of boiled meats
3 – 4 Ata Rodo or more
1 red onion
1 cooking spoonful of Palm oil
1 cup periwinkle
