2 cups rice (basmati or parboiled rice )
2 cups water
1/3 cup blended pepper mix (optional)
Teaspoon each (curry, thyme, paprika)
Salt – to taste
3 tablespoons oil (coconut)
Handful chopped peppers
1/2 small onion (chopped)
1. Preheat oven to 425F
2. In an oven safe pan, combine all ingredients.
3. Seal with foil and cover tightly. Bake for 35 mins.
