So you’ve heard of Banana bread but have you tried plantain bread? There’s more to plantain than dodo, boli and plantain pepper soup.

This easy plantain bread recipe will help you make good use of your overripe plantains especially for those who do not like soft plantains.

HERE’S WHAT YOU’LL NEED TO MAKE YOUR PLANTAIN BREAD

Ingredients:
2 overripe plantains
80g melted butter
140g granulated white sugar
1 egg (beaten)
200g all-purpose flour
1 tsp. vanilla extract
1 tsp. baking soda
Pinch of salt

STEPS TO MAKE PLANTAIN BREAD

  •  Peel the plantain, cut it into small chunks and mash with a masher.
  • Add the butter and blend it in with a wooden spatula. Add the salt and bicarbonate of soda and mix in. Follow with the sugar.
  • After mixing properly, pour in the beaten egg. Mix once more. Add the vanilla essence, continue stirring.
  • Finally, sieve the flour into the mixture and properly blend together
  • Grease a bread pan with some butter
  • Pour the bread mix into the greased pan and spread evenly.
  • Bake in a pre-heated oven ( 350 degrees Fahrenheit or 175 degree Celsius) for 1 hour to 1 hour 10 minutes.
  • When done set aside and allow to cool.
  • Serve when cool and enjoy any beverage of your choice.
