One recipe to try out this week is Potato Omelette, which can serve as a perfect breakfast. It’s not just a delicious meal, it also contains important nutrients the body requires.

Potato Omelette can be prepared in your kitchen by following the directions below.

Ingredients for Potato Omelette

  • 2 Irish potatoes
  • 3 eggs
  • 1 cooking spoon olive oil
  • 1 small red onion
  • ½ teaspoon ground cayenne pepper
  • ¼ ground black pepper
  • 1 handful of green peas
  • 1 handful diced sweet peppers (fresh paprika)
  • 5 baby spinach leaves
  • Salt (to taste)


1. Boil some water, add the diced potatoes, and cook on high heat for 5 minutes.

2. Grill to give the slices some dark stripes, (see the video below). This is optional.

3. Beat the eggs.

4. Add the peppers, green peas, onions, and salt. Stir very well.

5. Pour the olive oil into a frying pan and when it heats up, pour in the egg mix and spread it out.

6. Lay the spinach leaves and the potato slices flat on the egg, making sure the potatoes and spinach are immersed in the egg.

7. Cover, reduce the heat to very low, and slow-fry for 15 to 20 minutes or till the egg cakes are all over without burning.
