Follow This Simple Recipe To Prepare Agidi Jollof This Weekend


Agidi Jollof is a common Nigerian recipe similar to Moi Moi. It is just the usual Agidi or Eko made into Moimoi form but cornflour is used instead of beanflour.

Ingredients

-2 cups of cornflour or Akamu

-200 g biscuit bone

– Atarodo

-Tatase

-1 pc onions

-Tomato paste

-3 tbsp vegetable oil

-1 pc seasoning cubes

-1 pinch salt

-Uma Leaves


How to prepare

1. Wash and boil the brisket bone with seasoning cube, half of the onions (chopped) and salt to taste till the bones get soft.

2. Blend rodo, tatase, tomato paste and the remaining onions in a blender and set aside.

3. Heat the oil in a saucepan over medium heat and fry the tomato puree for about 3 minutes.

4. When the brisket is ready, add the tomato stew and curry and let it simmer for some minutes and then set aside.

5. In a pot, mix the cornflour/Akamu/Pap with water until it forms a smooth paste. Please add water bit by bit because that’s the best way to get a good mixture without lumps. This should be done off the stove.

6. Boil some water and add to the paste till it thickens.

7. Pour the hot water into the corn starch mix, stirring at the same time till you notice it start to thicken.

8. Transfer the pot to a stove and set the heat to low. Continue mixing/stirring till the agidi is completely solid.

9. Add the tomato stew leaving out the bones and stir till it has a rich reddish colour.

10. Add little water and let it simmer then add the bones.

11. Dish the mixture into the Uma leaves and wrap in a triangular shape.

12. Set aside to cool.

13. Eat alone or serve with fried plantains or yam.
