Ogbono Soup also known as Draw Soup is one food that is so delicious, easy to make and fast.It is a soup common in the eastern region of Nigeria.

It is a great soup option for swallows like Fufu because it makes it more easily to be swallowed because the soup is in a slimy form.

Some people like their Ogbono soup plain, with no added vegetables, others would not prepare it unless there is some kind of vegetable in it. A third set of people love their Ogbono Soup with Okra.

Ingredients

 

  • Meat of choice (beef, chicken, turkey or assorted meat)
  • 1 cups of ogbono seeds
  • Stock fish head (medium size)
  • 2 medium size dry fish
  • 1 cup of crayfish (ground)
  • pumpkin leaves or bitter leaf (to your taste)
  • 10 to 15cl of palm oil
  • About 1 litre of water
  • salt and pepper to taste.

How To Prepare

1. Soak the dry fish and stock fish with hot water and wash thoroughly to remove sand and impurities.

2. Parboil your meat the normal way, with all the necessary ingredients (2 cubes of knorr or maggi, salt, onions, half T/S of thyme and other spices or flavors of choice).


3. Add water to the meat after about ten minutes and cook till it is soft enough for consumption and the water is almost dried (just about 1 cup left), You will need to add 5-7 cups of water at this point.

4. Add the washed dry fish and stock fish, about 10 to 150ml of palm oil, ground crayfish, stir, cover and cook for 10-15 minutes.

5. Add salt and pepper to taste, add a cube of maggi or knorr (optional), add the ground ogbono seeds, stir and cook for another five minutes.

6. Add the vegetables.

7. Allow to simmer for three minutes after adding the chopped fluted pumpkin leaves or bitter leaves (as below)
