This Moi Moi Recipe Will Have Your Family Asking For More

Nigerian Moi Moi

Moi-moi is one of those meals eaten in almost all Nigerian homes. It is a nutritious dish that is made from beans and other healthy ingredients. There are a variety of ways to make Nigerian moi-moi.

 

Moi Moi is quite easy to prepare, and on average, it takes about an hour to get ready. However, there are some steps you need to take the day before if you decide to make your own Moi Moi from scratch.

Ingredients

  • 750g of Brown Beans
  • Vegetable oil
  • 6 Tablespoons of ground crayfish
  • Seasoning of choice (4 large cubes or 8 small ones)
  • 2 Large onions
  • 1 tbsp ground nutmeg
  • 2 liters of warm water
  • Tatashe pepper
  • Yellow pepper
  • Salt
  • Moi Moi leaf, nylon, or small tins

Preparation

1. Soak your beans overnight if you can afford to, or for three hours. This would help the beans to soften and make the coats come off easily.

2. Remove all the coats until you are sure that it is only the white part that’s left, then put the beans in a large bowl.

3. If you are using eggs, fish, or any type of protein, cook them properly and keep them aside.

4. Blend the beans with the peppers and onions until you cannot feel any lumps in them. The consistency and texture of your moi moi mix is very important to how it will look and taste when it is ready.

5. Once you are done blending, add in your crushed seasoning cubes, crayfish, and some vegetable oil.

6. Add your meat and fish and salt to taste and stir very well with a big wooden spoon.

7. Put some water into a big pot and pad it with moi moi/uma leaves.

8. Put your moi-moi in your container of choice. If you’re adding eggs, unshell them and put one egg or half per container.

9. Steam for at least one hour and check it periodically by using a metal utensil to see if it is ready.

10. When it is ready, open the pot to let out the steam, and leave it to cool.

Serve it alone or as a side dish with rice, custard, and pap.
