
Beans belong to the family of crops (Fabaceae) referred to as legumes, the pea or bean family. There is a wide variety of beans, but the types commonly used in preparing Nigerian bean recipes are kidney-shaped black-eyed beans and brown beans.
Many people do not enjoy eating beans, but the good thing is it can be prepared in so many healthy ways.
Here are seven delicious and healthy recipes to try with beans.
1. Beans Porridge

This is probably the most common dish made from kidney beans; here, the beans are cooked on their own with added ingredients like pepper and red oil in a porridge form. Variety is achieved by adding yams, plantains, sweet potatoes, or baby corn.
2. Akara

This is another Nigerian food recipe where the beans’ coat is removed, the seeds are blended, and deep-fried to make balls known as bean cakes. It is usually taken with ogi/pap as a breakfast meal.
3. Moi Moi

Similar to akara, the beans’ coat is removed by a special technique and blended and steamed with ingredients like fish and eggs. These days, some people do not peel the beans before preparing this meal, especially when using brown beans. It can also be prepared with bean flour.
4. Ewa Agoyin

Also known as Beans & Stew, it is a good way to enjoy beans even if you are not a fan of beans. It tastes oh-so-good with soft, stretchy bread.
5. Beans and Rice

As the name implies, 2 major staples (beans and rice) are combined. The beans are first cooked for a few minutes before the rice is added. This is a healthy way to balance meals.
6. Beans soup (Gbegiri)
Gbegiri soup is a Yoruba soup prepared with beans. It goes well with amala when served with ewedu soup.
7. White Moi Moi (Ekuru)

This is another version of Moi Moi, which is cooked without any ingredients. It is usually eaten with stew.
